One of the most important things for me, is SIMPLE meals!  I need, quick and easy.  So our suppers usually consist of a protein and vegetable- we try and stay clear of carbs and sugars at night.  (Our kiddos obviously can't eat this way all the time, so we often modify the meals by adding other foods to their plate)

This is a meal that we made this past weekend 'before' we officially started our health kick and is a complete great meal for the entire family!


Basil Salmon with green beans and grape tomatoes:

  • I season the salmon and add a fresh basil herb blend  (comes in a tube-produce section)
  • I broil the salmon 7-10 min.
  • Green beans are fresh in a steam bag (4 min) add seasoning and EVOO.
  • Sprinkle grape tomatoes plain (can also grill them)

Marinated chicken, oriental rice, crisp veggies, and toasted almonds, in lettuce cups
